The burger is a very popular beverage in Asia as well as other continents. Served with different fillings in different countries. Louis Lassen is one who is believed to be the founder of the hamburger in which meat and beef are filled. This is a really very rich and high protein-based recipe if made properly. This is not a very quick and easy recipe. It needs some before preparation also.

But today we are going to recreate this burger in Indian style with veggie. A Macdonalds style one which is served in India called as Aloo Tikki Burger.

So let's make our Indian veggie burger from scratch without wasting any more time!

Breadcrumbs making:
  • If you had readymade breadcrumbs then you can go ahead to the next step given below.
  • Take 7-8 slices of bread and grind it into a semi-fine consistency. Don't make it too powdery.
  • These breadcrumbs help to bind the tikki's properly.
Veggies preparation:
  • Take 3 large potatoes, 1 medium-size carrot, 1/2 cups of peas, and 8 to 9 french beans.
  • Cook them properly via the instant pot method or in a cooker/pan. Make sure that there is no water and moisture.
  • Peel the potatoes when warm, mash it with a masher.
  • Chop the steamed carrot and beans and add to the mashed potatoes.
  • Also, add the peas.
  • Mix everything properly and keep it aside.
  • Chop 1 medium size onion finely. 
  • Take 4-5 cloves of garlic,1/2 inch ginger, and 1-2 green chilies. Crush them all and make a paste-type mixture.
Patty Mixture:
  • Put the 1 tablespoon of oil and heat the pan.
  • Add the crushed paste of ginger-chilies-garlic paste.
  • Cook it a bit until the aroma goes away.
  • Add the chopped onions. Cook till the onions become translucent.
  • Add 1/2 teaspoon of (coriander,turmeric,red chilli,cayenne pepper,cumin,garam masala) powder.
  • Turn off the gas and Stir well. Let the spices get mixed with the paste.
  • Add the veggies into the paste. Add salt as per taste and 5-6 teaspoons of breadcrumbs.
  • Mix everything well and keep aside.
Patty Making:
  • Make patties according to the size of your bun. If your patty mixture looks too weak then add some more breadcrumbs.
  • Cover your patties and keep them aside.
Mayonnaise :
  • Add 3 tablespoon of eggless mayo to a mixing bowl, add 1/2 teaspoon of crushed mustard seeds and black pepper.
  • Pour 1 tablespoon of lemon juice.
  • Add 1/2 tablespoon of apple cider/white vinegar and 1 tablespoon of olive oil.
  • Add a pinch of sugar as per your taste.
  • Mix well and keep aside.
  • You can also make tangy mayonnaise by adding tomato ketchup into mayonnaise.
Cut slices of cucumber, onions, tomatoes, capsicum, uncut lettuce, and cabbage leaves. Cover these veggies and keep them aside.

Batter making:
  • Take 3 tablespoons of maize flour, polenta or cornmeal(fine),3 tablespoons of rice flour, and 2 tablespoons of gram flour (Corn starch and purpose flour can also be used instead of maize flour and gram flour)
  • Add 2-3 tablespoons of water and mixing/beating it properly. Make sure that no lumps stay in the batter. The consistency should be not too thick neither too watery.
Covering and frying the patties:
  • Put 4 to 5 tablespoon of oil in a kadhai or pan and keep it for heating.
  • When the oil is heated dip the patties into the batter and then coat it properly with the breadcrumbs.
  • Repeat both steps with the same patty to make it more crisper(optional)
  • Do the same with the other parties too.
  • Here you can do deep shallow fry in a kadhai with 4-5 tablespoon of oil for 1 patty or you can fry it in a pan with 2-3 tablespoon of oil. Shallow deep fry on low flame gives really a very crisper patty.
  • After frying keep it on tissue paper so the extra oil get's removed.
The toasting of buns:
  • Cut the buns into half and toast it on a pan by applying butter on both sides of the bun.
Assembling of burger:
  • First spread the mayonnaise on the bun.
  • Place the patty in the center.
  • Place the chopped veggies on the patty.
  • Then finally close the burger by placing the second bun on top of 1st bun.
  • You can also add some cheese/slices or diced cheese in between.
Cheers! Your veggie burger is ready.

Notes:
  1. You can customize the assembling of burgers according to your style and need.
  2. You can skip and veggies in veggie preparation if you don't like it.
  3. Serve the burger hot with some tomato ketchup and french fries.
  4. You can make the patties one day before and can fry on the posting day to make the process a bit free and less hectic.
  5. You can also use oil instead of butter while toasting the buns.
